Sub-cardioids can be a lot of fun but can be equally disappointing.
I have used the Schoeps MK.21's with fantastic results and liked them in
comparisons better than the MK.4v's or the DPA (I know..."B&K") 4011's
(both cardioids) when run side by side. However, this was in a nice
open space (The Gorge) where the taping section is fairly close to the
P.A.

Like yourself, I love omnis' when the situation is right--I typically
find they need to be up close and outdoors in a place with no severe
incline in the back.
Two years ago, I ran the MBHO 603/200 cardioid setup at FOH in a 3000
seat indoor venue with stunning results. They sounded so good that I
decided using the KA300 sub-cards could be appropriate for the second
night of the three night run. OOPS! The sub-cards did exactly what
they are supposed to do--deliver deeper low-end and present the room
more accurately--BOOM and ROOM with a band somewhere in the distance;
not as bad as omnis would have been but still the wrong choice. We
cleaned it up by removing about 6db around 75Hz but still the presence
was lost. My experience says save those sub-cards for the sweet-spot
outdoors.
I have heard quite a few MBHO sub-card recordings (Thanks Candace) of
some outdoor Bluegrass shows that have been fantastic--wide-open
spaciousness with clarity and the feeling of sitting in field as the
pickin' goes down.

I wouldn't get them if your intent is to use them inside but I'm sure
others will offer different feedback.
Now, while on the topic of sub-cards and big outdoor events, if DPA
ships the new 4026's in time, we'll give them a run at Bonnaroo. If you
